Fine Dining in Lancaster PADuring renovations, workers found in the floor beams a signed inspection stamp — November 5, 1890 — with the name of tobacco inspector John J. Jeffries. We named the restaurant after him.

We've designed our menu based on local, seasonal, sustainable and organic agriculture and delicious recipes. Please join us and taste the difference of local farm-to-table sustainable cuisine in one of Lancaster's best fine dining restaurants.

As the Chefs and Owners of John J Jeffries, we believe you will find our passion for supporting local businesses and preserving the land we live on, to be contagiously obvious in how we run our restaurant.

All of our meats are raised locally, confinement-free on fresh green grass pastures. No hormones, antibiotics, steroids or forced-fertilization occurs.

Our produce is local organic or chemical free. We use local grass fed cream, butter and eggs.

We also provide sustainable seafood and support sustainable fisheries and their communities. By doing so, we are encouraging a shift in consumer demand away from overexploited fisheries and unhealthy fish farming practices.

Our water for drinking and cooking is filtered through an in-house carbon system.

Our coffee is organic fair trade and locally roasted in small batches.

A committment to animal welfare.

Since opening JJJ in 2006, chefs Cavanaugh and Carson have been working arduously to improve the Central Pennsylvania food system, to include the treatment of farm animals. We not only maintain strict relationships with the small family farms from whom we source our meat, but we also visit our partner farms and develop longstanding relationships. Additionally, we own and operate our own USDA-inspected butcher shop to practice nose-to-tail, full-carcass utilization to respect each animal and reduce the number of animals needed. Our beef is from closed herds raised on pasture year-round, never on feedlots. Our pork is from pigs with outdoors access on pasture or on wooded lots so pigs have all the space and opportunity to root around and explore. Our chickens are raised in small flocks outdoors with sunlight, fresh air, and feet on grass. We also source pastured turkeys and guinea hens and ducks raised on a fresh stream.

To formalize our efforts for animals and add the extra layer of transparency that conscious omnivores seek, we at JJJ are committed to having all our beef and chicken sourced from ranches and farms earning an independent animal welfare certification recognized by EatREAL and the ASPCA® Shop With Your Heart program by 2019. Furthermore, we will stand with the animal welfare movement to improve the lives of broiler chickens because we have been working to improve the lives of farm animals this whole time. To that end by 2024, we will source only chicken certified by Global Animal Partnership (GAP) and require all chickens to be processed in a manner that avoids live-dumping and live-shackling, and instead utilizes a pre-shackle, multi-step controlled-atmosphere processing system that’s widely hailed as more humane.
